Does the title not say all that needs to be said? I asked for some single serve requests after the success of the single serve cookie dough mug cake. Chocolate and crumbles came out on top so needless to say I went with my default straight off the bat. What better excuse to whip up a single serve chocolate mug cake… taste testing was far from a chore.
I’ve made a few different versions in my time but I wanted this one to suit as many peoples needs as possible with some variations depending on what you have in the cupboard.
It’s gluten free, nut free, low fodmap, dairy free, egg free and then obviously vegan friendly. Sweet, fudgy and you can under cook it if you want a gooey base that acts like a chocolate sauce all in one. This however will simply just vary depending on your microwave… more excuses to make it on repeat.
I decided to opt for no toppings just to highlight it’s simplicity but of course you could add a dollop of yogurt or scoop of your favourite ice cream or even stick a spoonful of nut or seed butter in the centre before or after cooking for even more goo factor.

Single Serve Chocolate Fudge Mug Cake

- 20g gluten free flour; you can use standard flour, buckwheat flour or oat flour
- 15g cocoa powder
- 1/2 tsp baking powder
- 1 tbsp maple syrup
- 1 heaped tsp milled flax seed or chia seed
- 1/2 tbsp melted coconut oil, ghee or olive oil
- 90ml warm water; or you can use oat milk, almond milk or whatever milk you like or have on hand!
- Pinch of salt
- 1 tbsp mini dark chocolate chips
Instructions
Whisk together all ingredients except for the chocolate chips in a bowl or jug.
Stir through chocolate chips reserving a few to place on top of the hot cooked mug cake.
Place into a lightly greased microwave safe ramekin or mug.
Cook for 1 minute. Cooking times will vary. 1 minute in my microwave achieved a gooey saucy based, 1 minute 20 seconds resulted in a cooked through fudgy cake consistency.
Experiment to achieve your ideal consistency!
Place reserved chocolate chips on top. Serve as is or with dairy free ice or yogurt of choice. Also delicious with a dollop of nut or seed butter on top and some fresh raspberries.
