Single Serve Microwave Cookie Dough Mug Cake

Aren’t single serve recipes the best!! I just love them for so many reasons.

I love a bit of variety and having a different dessert everyday is my ideal, until I find something I love and I make it on repeat.

Who doesn’t love a freshly made dessert, still warm and gooey?! And making something up fresh in a couple of minutes, it doesn’t get much fresher than that!

Genuinely I’m going to lie, portion control isn’t an issue for me these days but I know it is for a lot of people. Making a batch of brownies, a large cake, or a whole tray of cookies and then finding it more than a little difficult to stop at just the one chunk, slice or cookie. Single serve recipes just eliminate the issue in one fell swoop.

As it’s lovely and gooey and warm you can top it off with a little dairy free ice cream or ice cream of choice if you want to bring it to an even more indulgent luxurious level.

You also have the option of under cooking it a little. However, as microwaves vary so blooming much, it might take you a few rounds to find your ideal spot… cookie mug cake on repeat for a few days running!

Single Serve Cookie Dough Mug Cake

By Serves: 1 Prep Time: 5 minutes Cooking Time: 1 - 1.5 minutes

Ingredients

  • 10g almond meal
  • 30g oat flour
  • 70ml unsweetened oat milk
  • 8g coconut sugar or sugar of choice*
  • 5g clarified butter or coconut oil
  • 1 heaped tsp milled flaxseed
  • 1/2 tsp baking powder
  • Pinch of salt
  • 10g mini dark chocolate chips

Instructions

Mix together all ingredients in a jug aside from the chocolate chips.

Stir through chocolate chips, reserving a little few for on top.

Grease a deep microwave safe ramekin with spray oil.

Add the cookie mug cake batter to the ramekin. Reserve those chocolate chips for adding on top once it's cooked!

Cook for 1 minute to 1.5 minutes depending on desired level of doneness. Microwave cooking times will vary!

Sprinkle reserved chocolate chips on top.

Allow to sit for 2 or 3 minutes to cool a little before digging in.

Delicious as it is or serve with a dollop of yogurt or scoop of ice cream of choice!

Notes

*I just like the caramel flavour the coconut sugar bestows!
