Strawberry Shortcake Overnight Oats

I’m either on a toast or oat kick and currently it’s most definitely all about the oats! I LOVE making them the night before and leaving them to cool in the fridge or just simply making overnight oats and not cooking them at all.

Strawberries are officially back in season and tasting as beautiful as ever. EVERY year I forget how amazing they are until they come back into their own.

I used Nature’s Charm coconut whipping cream to add a touch of luxury and of course piled it high on top! It was basically like eating an “oat” cream sundae for breakfast. A little granola for crunch, homemade and banana laced (recipe SOOOON) and some cute little strawberries because I was feeling particularly fancy.

Ingredients

  • 100g oats of choice, I like jumbo oats for the texture!
  • 150ml water or non dairy milk of choice
  • 100g Nature’s Charm coconut whipping cream
  • 2 tbsp milled flaxseed
  • 4 tbsp finely chopped strawberries
  • **For topping**
  • Nature’s Charm coconut whipping cream
  • Strawberries
  • Strawberry Chia seed jam or vegan friendly strawberry jam of choice
  • Granola of choice for that crunch!

Instructions

Refrigerate the can of Nature’s Charm coconut whipping cream before using. Open and drain off the water. There is way less water than with other canned coconut milks and coconut whipping creams so you will have plenty left to work with!

Mix together all overnight oat ingredients in a large bowl and place in the fridge overnight.

Serve up in bowls, jars or glasses with coconut whipping cream (whisk for a couple of minutes so it fluffs up!), chia jam, strawberries and granola. I promise you will be in breakfast heaven!
