Vietnamese Coffee Inspired Overnight Oats

Inspired by a new to me coffee based drink I had the pleasure of trying in a local coffee shop. They’re actually going to use Nature’s Charm Coconut Condensed milk in their creation. 

I love coffee, but tend to reserve it for mornings so that I don’t end up wide awake in the middle of the night.

The oats themselves are pretty basic, until you go and add some coconut condensed milk and they become sweet, luxurious, and a beautiful base for that coconut cream and coffee whip topping. Grated chocolate is a must over the top. 

I don’t even know how to pronounce “Dalgano” coffee, but that is the topping we’re adding on here. It couldn’t be easier but I’d definitely recommend a cheap hand held electric beater. I’m not sure if a little electric whisk would work, I’d definitely give it a whirl, it just might take a bit longer and I’m a woman who likes speed when it comes to food and all things kitchen tasks.

I’m well and truly invested in overnight oats at the moment and I just love a little variety. Breakfast is the meal that most excites me; all things chocolate, cake and cookie aside. These are in my current top three, expect some more ideas SOON.

Ingredients

  • *For the Oats*
  • 1 cup oats
  • 1 cup dairy free milk of choice
  • 2 tbsp milled flaxseed or chia seed
  • 2 tbsp Natures Charm Coconut Condensed milk
  • *For the Topping*
  • Nature’s Charm Coconut Whipping Cream
  • 2 tbsp maple syrup
  • 2 tbsp instant coffee
  • 2 tbsp hot water
  • 1 or 2 squares of dark chocolate grated
  • Rose petals - optional

Instructions

Mix together all oat ingredients and place into the fridge overnight.

In the morning place oats in jars or glasses and top with a couple of tablespoons of Nature’s Charm coconut whipping cream. I like it straight from the can but you can refrigerate it and scoop off a firmer cream from off the top if you prefer.

With an electric beater or mixer, whip together your coffee whip using the maple syrup, instant coffee and hot water. Make sure to use a deep jug or mixing bowl to prevent splashing yourself with coffee… lesson learnt the hard way over!

Whisk it until soft and fluffy...about 3 minutes.

Place coffee whip on top of oats and sprinkle with grated chocolate.
