So Lifeforce currently have super simple Nut Butter Ball Challenge ongoing. I figured I should most definitely get involved and so I decided to create something a little different. Peanut Butter fudge bites sandwiched between two crispy pretzels and dunked in chocolate. SIMPLE and delicious!
I love a little challenge, so I basically just challenged myself to create a nut butter bite that wasn’t date based as it tends to be the go to. These bites come together so quickly and they’re super cute!
If you’re not a pretzel fan or maybe you need a gluten free option, you could sandwich them between two thin gluten free crackers or cookies before dunking in chocolate or leave them as they are and make buckeyes; coating most of the ball and leave a little “eye” of peanut butter peeping through. The pretzels make them for me, I just love the salty crunch!

Peanut Butter Pretzel Bites

- 130g Peanut Butter
- 3 tbsp honey
- 80g plain spelt flour or any plain flour, gluten free if necessary
- 40 pretzels
- 80g dark chocolate or chocolate of choice roughly chopped
- 1 heaped tsp coconut oil; two teaspoons if you coconut oil is already liquid
Instructions
Mix together peanut butter and honey in a large bowl. Add the flour and mix well to form a soft dough.
Divide dough up into 20 pieces and roll between the palms of your hands to form balls.
Sandwich each one between two pretzels and place them on a baking lined plate or tray into the freezer for 15 minutes.
Melt chocolate in the microwave using a microwave safe jug or bowl that won’t overheat. Heat for 30 seconds, stir, heat for 30 seconds more. It should only take about 2 minutes total.
Add coconut oil and stir to combine.
Remove bites from the freezer and dunk one side of each into the melted chocolate. Return them to the baking paper lined plate or tray to firm up.
Store in the fridge for up to one week.
