No bake cookies because life if busy and sometimes you just need a handy, kid friendly, chocolate loaded treat that you can whip up in a hurry.
This one is great for little hands, easier than a Rice Krispie cake, they allow for a little more involvement, and they’re a lot less crumbly.
I filled the centres with dark chocolate and topped them with little mini eggs before they set. You could also fill them with a colour icing, some jam, or more peanut butter if you prefer.
Clearly I’m now in full on Easter mode. Chocolate is up there with being as important as one of my five day to be honest!

Whisk together the honey, melted butter, peanut butter and cocoa powder in a large bowl. Add the oats and coconut and mix well to combine. Divide the mixture into 10 even balls. Flatten and shape into cookies in a large plate or tray that will fit in your fridge. Place into the fridge to firm up for at least an hour. Melt chocolate in the microwave using 30 second increments. Place 1 - 1.5 tsp of chocolate in the centre of each cookie that has firmed up in the fridge. Before it sets, place mini eggs, chocolate covered almonds or jelly beans in the centre. Store in the fridge for up to one week. *If you don’t like coconut you can add 20g more porridge oats or 20g of ground nuts, hazelnuts work well in place of the coconut.No Bake Easter Nest Cookies
