Easy Oats Chocolate Digestives

Five simple ingredients, six if you count a pinch of salt! These could not be easier to make.

No creaming butter or chilling the dough. Simply mix, knead, roll, cut and bake. That actually makes them sound more complicated than they are.

Of course a biscuit is always better when topped with chocolate. Who would choose a plain digestive over a chocolate one? I created this simple recipe for Homecook to provide a simple after school biscuit bake option. Of course they equally make the perfect combo to your morning coffee or tea, whether you’re working from home or just sitting down to catch a break in between school runs.

Easy Five Ingredient Oaty Digestives

Ingredients

  • 140g oats, ground to flour consistency
  • Pinch of salt
  • 30g butter, melted
  • 1 tbsp milk
  • 2 tbsp maple syrup
  • 150g Homecook Milk Chocolate Wonderbar

Instructions

Preheat your oven to 180C (350F).

Mix together the oat flour, salt, melted butter, milk and maple syrup in a large bowl.

Roll the dough out between two pieces of parchment paper.

Use a cookie cutter to create 9 - 10 cookies; reroll the dough scraps as needed.

Place cookies onto a baking paper lined tray.

Bake in the preheated oven for 18 - 20 minutes.

Allow the cookies to cool fully.

Melt chocolate in the microwave using 30 second increments.

Spoon chocolate onto cooled biscuits. Create some signature lines by pressing down on the chocolate before it sets with a fork.

Store cookies in a sealed container for up to four days.
