Pumpkin Pie Protein Smoothie Bowl

It’s never too early for a the pumpkin recipes to start rolling in right?!!?

This protein pumpkin pie smoothie bowl is delicious thick and creamy, spiced and sweetened with cinnamon and vanilla and topped off with a little chocolate, maple caramalised pumpkin seeds, bee pollen and some coconut flakes….all the delicious things in life!

This smoothie is the perfect transition from summer to fall in one fell swoop. It’s still pretty mild here in Ireland so smoothie bowls are still a viable and much sought after breakfast option…especially post workout when it feels like it’s 10 degrees warmer outside than it actually is. Anyone else get that….and then you eat something decidedly cold and all of a sudden you’re body temperature drops twofold!

This smoothie bowl is oh so worth it though! I remember a few years back when I still had to buy canned pumpkin from Amazon but you can pick it up in so many stores now! Not exactly the local supermarket, but the likes of Avoca, Donnybrook Fair and the Fresh stores in town all have it in plentiful stock, pretty much year round!

Such a handy ingredient, not just for smoothies, but pancakes, oats, baking…so many wonderful possibilities and ideas coming this way!

Pumpkin Pie Protein Smoothie Bowl

Ingredients

  • For the Pumpkin Seeds
  • 1 cup (120g) pumpkin seeds
  • 2 tbsp maple syrup
  • For the Smoothie Bowl
  • 20g Pulsin unflavoured pea protein
  • 150ml unsweetened oat milk
  • 100g frozen banana
  • 100g frozen pumpkin puree
  • 1 tbsp (15g) roast cashew butter
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • To Serve
  • Coconut Flakes
  • Maple caramalised pumpkin seeds
  • Dark chocolate of choice
  • Bee Pollen

Instructions

For the Pumpkin Seeds

Preheat oven to 160C (320F).

Place pumpkin seeds in a bowl. Pour over maple. Mix well to coat.

Place on a baking paper lined baking tray and roast in the preheated oven for 12 -15 minutes.

Allow to cool fully on the tray. Store in a seal tight container for up two weeks once cool.

For the Smoothie

Blend together all ingredients in a high speed blender until perfectly smooth.

Add a touch more milk to desired consistency but I like mine SUPER thick!

Serve with suggested toppings if desired in a mighty bowl.

Notes

Drizzle with a touch of maple syrup for some added indulgence before serving if desired!
