Basic Plant Protein Bars

My go to basic plant protein bar in a hurry. No food processor or blender, just a bowl to clean and even that part is far from arduous. The mixture comes out as a dough and so the bowl is left relatively clean. The downside is no bowl of lick clean but it does mean that all the ingredients actually end up in your bars. This recipe can be sliced up into 4 or 5 bars. I prefer to go with four large bars and use a standard sized loaf tin to make them.

You could make a bigger batch but I tend to make a couple of different varieties rather than all the same flavour and mix ins, in this case sesame seeds…variety is the spice of life!

I also just find it easier and less messy to create this sized batch. The dough comes together with ease. I’d probably get lazy with a bigger batch and whack it all in the food processor which would of course leave me with one of my most dreaded tasks to complete…cleaning my food processor!

I used Pulsin Chocolate Pea Protein (NUTC20 gets you 20% off online at the Pulsin site!), which is sweetened with stevia. There is a still a relatively large amount of maple in the mix which if you find the mixture sweet enough you could potentially sub water in the same quantity. I’m yet to try it myself as I like a little extra sweetness and the added carbs to refuel my glycogen post workout!

I just love the little crunch throughout you get from the sesame seeds. I used black and always tend to more so for aesthetic purposes. They are unhulled and basically less processed then they’re white hulled counterparts which just means they hold on to more of their potential nutrients.

You can use sunflower seed butter, tahini, almond butter, cashew butter…whatever your heart desires or you have on hand to make different varieties. Basic Plant Protein Bars

By Serves: 4 - 5 Prep Time: 10 minutes

Ingredients

  • 130g Rich Roast Smooth Meridian Foods Peanut Butter
  • 80g Chocolate Pea Protein
  • 3 tbsp (45 ml) maple syrup
  • 2 tbsp (30ml) Flax Oil
  • 1 - 2 tbsp oat milk
  • ¼ tsp Pink Himalayan Rock Salt
  • 2 tbsp (18g) black sesame seeds, toasted if desired

Instructions

Mix together all ingredients in bowl with the exception of the sesame seeds. Add oat milk as necessary to create a smooth pliable dough; it shouldn’t be sticky! Once you have a smooth dough you can knead in the sesame seeds.

Press dough into the prepared tin and spread evenly using your finger tips to smooth over the surface. Place into the fridge overnight to set.

Slice into four bars.

Drizzle with melted chocolate.

Store in the fridge for up to one week or freezer for up to one month.
