Peanut Butter Oat Cookies

Peanut Butter Oat Cookies…aka one of the best cookies known to man. A peanut butter cookie with a little more structure, firm around the edges, chewy in the middle, topped with the last of my leftover Halloween Smarties! If I was making these again I’d either use mini Smarties or mini chocolate chips so you get more pops of chocolate in each little nibble. I’m definitely one to savour my cookies and sweet treats in general, none of this gone in two bites jazz.

I actually opted for crunchy Meridian Foods Peanut Butter for a change which added a nice bit of crunch throughout. You may also have noticed I’ve taken to baking occasionally with eggs, and straight up sugar. The reason being…well I personally can now tolerate eggs in small doses and it makes baking that bit easier, and in terms of sugar, straight up sugar is personally easier for me to digest that the higher FODMAP “healthier” alternatives… the likes of honey, coconut sugar and Medjool dates. Of course Medjool dates still contain their fibre, but aside from whole fruits, sugar is sugar in my mind, especially when consuming it in relatively small doses. I’m not going to start lashing into my meals/drinks and basically just consuming it for the sake of it. But a little bit as part of what is a balanced diet for me, everyone’s moderation and balance is different depending on their lifestyle, metabolism to name but a few variables, is certainly not going to kill me.

It’s actually been quite liberating to get off my high horse and just embrace all kinds of food again without any guilt or feeling that I’ve “fallen off the wagon” or given in to “temptation”. For so long I was obsessed with having this elite dietary status, deliciously obedient, underpinned by my ability not to waver and remain focused and disciplined. Screw that is what I say now, I’m living my best life and it involves the occasional cookie!

Peanut Butter Oat Cookies

By Serves: 8 - 9 Prep Time: 10 minutes Cooking Time: 10 minutes

Ingredients

  • 120g crunchy all natural Meridian Rich Roast Peanut Butter
  • 70g soft brown sugar (for texture not because I deem it to be healthier)
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 50g jumbo rolled oats
  • 1/2 teaspoon baking soda
  • 40 - 45 smarties for placing on top!

Instructions

Preheat oven to 180C (350F).

Mix together nut butter through to the egg in a large bowl.

Fold in oats and baking soda.

Use a scoop to great 8 - 9 cookies and place onto a lined baking tray.

Roll the dough into balls and gently flatten, they will spread a little when baking.

Bake for 10 minutes, allow to cool on the tray for 5 minutes and then place on a wire rack to cool fully.

Notes

Store in a seal tight container for up to 2/3 days or freeze for up to one month.
