Salted Caramel Energy Balls

Energy ball number 2… can you tell I’m a little obsessed! They were never really my thing when they were “on trend” so to speak. The new snack kid on the block. I was always more of a bar fan but I just love the ease by which you can roll these up and stick them in the fridge and then you have the perfect afternoon bite!

These ones are a little more jumbo than the seedy chocolate ones from earlier this week. Loaded with oats, I find them a little more satisfying, though deliciously sweet thanks to Natures Charm Salted Caramel Sauce in the mix! They have a lovely chew and the added bonus of some tummy gut bacteria loving resistant starch from the raw oats.

Again no blender or food processor required which is obviously handy for those of you who don’t have either in your possession but also means way less cleaning up and just a more speedy snack prep altogether! I have both and no matter how many times I realise how small a task cleaning them is in reality I’d rather not have to undergo the minuscule activity if I can avoid it. I put it up there with changing bed clothes as one of my least desired household chores.

Salted Caramel Oat Energy Bites

By Serves: 8 - 10 Prep Time: 10 minutes Cooking Time: Nada!

Ingredients

  • 150g oats
  • 50g oat flour
  • 1 tbsp chia seeds
  • 100g smooth all natural peanut butter
  • 120g Nature’s Charm Salted Caramel Sauce
  • 30g coconut oil, melted

Instructions

Mix together all ingredients in a large bowl. Place in the fridge for 20 minutes. Remove and roll into desired number of energy balls.

Store in the fridge for up to one week or freeze for up to one month. Delicious removed a few minutes before serving so that they are nice and fudgy; though they will still be nice and chewy straight from the fridge!
