Banoffee Oats

Banana, Caramel, Cream….Chocolate. It’s an epic combination and one which I like to consider at every opportunity, including breakfast. I’ll be honest, you’re more likely to see me have a bowl of oats at night time than first thing in the morning. I start the day light with fruit and some Coyo, PB or Sunbutter, before hitting the gym, savoury is my ticket during the middle of the day and later in the evening when I’m chilled, maybe watching an episode of Marie Kondo or catching up on Home and Away, I like to sit and thoroughly enjoy a comforting bowl of oats.

I think there are a lot of people, myself included, that at times feel they need to justify their food choices. Having come from years of eating disorders, it took a further few years of “just eating” and living my life based on my own terms, before I let go of that mentality. I don’t eat to please others, to comfort others, to keep them company or because I feel any external pressure to “perform”. It can be difficult, but I think when you have truly good relationship with food, all food intolerance’s and grumpy tummy issues aside, it’s actually quite simple. I actually think if you adopt the mentality of Marie Kondo with food, does it spark joy, it could lead you down the right path. Of course there are times when you have to eat out of pure functionality/necessity, but when I have a choice, I like to ensure that food sparks joy for me.

What does that look like? It looks like meal prep, home comforts, sometimes eating ice cream, sometimes opting for a yogurt bowl, seeking internal joy in terms of digestion and sometimes mere mental satisfaction.

These banoffee oats satisfy on all fronts. Tummy loving, and reaching out to my sweeter taste buds. They are truly epic and made so by using Nature’s Charm Condensed Coconut Milk in the mix, as well as topping them off with their Salted Caramel Sauce which is positively dreamy.

Banoffee Overnight Oats

Ingredients

  • 50g oats
  • 30g Nature’s Charm Coconut Condensed Milk
  • 125ml non dairy milk of choice
  • 60g Nature’s Charm Coconut Whipping Cream
  • 1 heaped tsp whole chia seeds
  • **For Topping**
  • Banana; caramalised if you have the time!
  • Nature’s Charm Salted Caramel Sauce
  • Cacao nibs
  • Chopped Nuts

Instructions

Mix together oats through to chia seeds in large bowl, jug or jar. Place in the fridge overnight to thicken.

Serve in your vessel of choice topped with banana, cacao nibs, salted caramel sauce, chopped nuts and whatever else your heart desires.
