Jackfruit Tuscan “Tuna” Sambo!

Sambos/Sandwiches… they’re haven’t been my go to for quite some time but with so many beautiful real deal sourdough’s readily available I’m finding it much easier to digest, quite literally. I definitely don’t think bread, even sourdough, works well for my digestive system on a daily basis, at least at the moment, but it’s something I’m willing to persevere with!

As soon as I reintroduce a new food (catch up for anyone unfamiliar I have IBS and followed the strict low FODMAP diet for WAY TOO LONG, and I’m now working my way through the reintroduction phase with as much patience as I can muster!), I have a tendency to want to eat it for breakfast, lunch and dinner. I get so excited about all the new potential recipes I could create. It’s not the most ideal as sometimes it can be just a volume thing with IBS so two slices of sourdough might be a green light, and six slices, not so much!

This sandwich needed to be epic and it was thanks to using Nature’s Charm Jackfruit Confit which is truly awesome. The texture and flavour is sensational.  Dairy free tahini yogurt sauce, avocado, sundried tomato pesto and olives… it truly packs a punch.

Vegan Jackfruit Tuscan "Tuna" Sandwich

Ingredients

  • ***For the Jackfruit “Tuna” Salad***
  • 1 tbsp tahini
  • 1 tbsp dairy-free yogurt of choice
  • 1 tsp lemon juice
  • Pinch of salt and pepper to taste
  • 1 can Nature’s Charm Young Green Jackfruit Confit
  • 1 heaped tsp sundried tomato pesto (ensure it’s dairy-free)
  • 1 tbsp chopped kalamata olives
  • ***Everything Else***
  • 2 thick cut pieces of bread of choice
  • Sliced cucumber
  • Leafy greens of choice
  • ½ a ripe avocado

Instructions

Mix together the tahini, yogurt and lemon juice, season to taste and set to one side.

Drain jackfruit and tip into a bowl with the olives and sundried tomato pesto. Mix well.

Spread each slice of bread with the tahini mixture. Then place the jackfruit mix thickly onto one slice.

Layer up the other goodies as follows… avocado, cucumber, greens and then place the other slice of bread on top. Gently press down so it’s nice and snug before slicing in half!
