Coriander Pesto Pasta Salad

It’s so easy to get stuck in a rut when it comes to dinners, but I find nothing more inspiring than having a new product to play around with! Coriander pesto from Sacla’ is a lovely fresh twist on the usual basil pesto you might pick up, though they have a whole host of wonderful flavour packed options to choose from!

Pasta salad is the perfect side or full on main event as we come into warmer weather. Loaded with cheap and cheerful veggies and served with soft boiled eggs, all brought together by that wonderful coriander pesto. The perfect addition to any summer feast!

Sacla' Coriander Pesto Pasta Salad

By Serves: 4 Prep Time: 10 minutes Cooking Time: 10 -12 minutes

Ingredients

  • 250g pasta of choice, I used shells for a change which pick up the peas beautifully!
  • 4 - 6 tbsp Sacla’ Coriander Pesto
  • 100g frozen peas
  • ½ cup thinly sliced radish
  • ½ cup thinly sliced courgette
  • 4 soft boiled eggs, or cooked to your liking
  • Fresh coriander
  • 4 tbsp roast pine nuts

Instructions

Cook pasta according to packet instructions. Add peas to the pot for the last 4 to 5 minutes.

Drain pasta.

Add Sacla’ Coriander Pesto to the pasta and peas and mix well to combine; can be prepared in advance and the pesto will prevent the pasta from sticking together!

Add in radish and courgette and mix well to combine.

Serve up in bowls topped with soft boiled eggs peeled and sliced in half.

Garnish with fresh coriander and roast pine nuts!
