Almond Butter Red Pepper Hummus

Hummus is my favourite savoury dip/spread; because avocado doesn’t count right?! It’s technically a single seeded berry! I was going to say fruit but I 100% googled it to get the correct term.

This hummus is my new fave…roasted red peppers and rich naturally sweet almond butter. The texture is amazing thanks to the red peppers and almond butter. Perfectly silky smooth without having to add any additional liquid in the form of oil.

The perfect snack, pre dinner nibble, or something to help you create your very own personal variety board when you just can’t decide what it is you want to eat; basically me all the time.

Use it as a dip, spread on toast, dunk some fresh bread or serve as a saucy bed for some fried, poached or even soft boiled eggs.

Roasted Red Pepper Almond Butter Hummus

Ingredients

  • 1 can of chickpeas, drained and rinsed well
  • 250g jarred roasted red peppers roughly chopped
  • 2 tsp lemon juice
  • 60g Lifeforce smooth almond butter
  • ½ tsp paprika
  • 1 clove of garlic
  • ½ tsp salt to taste

Instructions

Blend together all ingredients in a blender, food processor or a large jug or bowl using a hand blender until smooth and creamy.

You can add a touch of water or olive oil if you find the consistency too thick for your liking.

Store in the fridge for up to three to four days in a sealed container.
