Chocolate Peanut Butter Overnight Oats

Can I introduce you to my favourite bowl of oats… chocolate and peanut butter, it’s just a match made in heaven. A combination which I’m delighted to say is now readily available in this epic complete nutritional shake from Dare Liberate. It’s packs quite the rounded nutritional punch! I’m hoping to be featuring the product and showing just how versatile it is in 2020 with lots of recipe ideas, but I figured I should start with the basics.

Just when they had launched I featured it in my peanut butter cacao protein bars, and of course we all need a go to overnight oats recipe. My go to sweet breakfast or sometimes my evening snack, depending on my mood.

Sweetened with just stevia, it’s a blend of pumpkin, hemp, peanut and sunflower protein, along with cacao, oats and flaxseeds. It thickens up oats or a pancake batter with ease as well as adding all the flavour in one might scoop, quite literally.

I used just over half a scoop in the mix but you can totally eyeball the amount, add a little more liquid if you need to loosen the oats out a bit, depending on your preferred consistency. I like my oats nice and thick, pudding like!

Whether it’s for over the Christmas holidays, or with the New Year in mind when it’s time to round up the troops and get yourself back to work or into some sort of routine, these oats are so darn easy to whip up and handy to have on stand by; I like to have a batch in the fridge for those days I decide to recipe test pancakes which do sometimes turn out to be a flop. The recipe frustration is enough for me to try and handle without having to deal with getting hangry in the process!

Chocolate Peanut Butter Overnight Oats

Ingredients

  • 50g jumbo porridge oats, gluten free if necessary
  • 30g Dare Liberate Motivational Shake
  • 10g cocoa powder or raw cacao powder
  • 2 tsp milled chia seeds
  • Pinch of Pink Himalayan Rock Salt
  • 250ml non dairy milk of choice
  • 30g dairy free coconut milk yogurt

Instructions

Mix together all ingredients in a large bowl, jug or container with a lid that you plan to transport the oats in.

Place into the fridge overnight to thicken up.

Serve topped with some more coconut yogurt if desired and some dark chocolate chips if you fancy a little extra indulgence.
