Blueberry Protein Smoothie Bowl

A speedy, thick, creamy, rich, positively dreamy, smoothie bowl! If that description doesn’t sell it to you then hopefully the photo will.

As pretty as it is satisfying, this smoothie bowl was given a protein boost with Pulsin Rice Protein, and along with a few other key ingredients it packs a nice rounded nutritional punch. 

I also made use of Nushfoods Cashew yogurt to give an extra little something. I always find once I add nice mix of protein, fats and carbs to my smoothie bowls they keep me satisfied for so much longer. Ideally if you’re having this post workout don’t go over the top on the fat, adding in nut butters and what not. The protein and carbs will be so much more readily digested and utilised by the body for the post workout repair and restoration of glycogen levels when it can be digested at a faster pace.

The consistency is SO GOOD. Thick yet light and airy at the same time, frozen blueberries and banana chunks are key as well as not adding too much liquid. This is where a high speed blender and the use of a tamper to push down ingredients while keeping the speed low at the beginning come in. Forewarning, I did break a couple of cheaper blenders trying to blend frozen banana chunks in the past, so if you don’t have a really powerful one let the banana thaw for a few minutes before attempting to whiz them up!

Blueberry Protein Smoothie Bowl

Ingredients

  • 125g frozen blueberries
  • 150g frozen banana chunks
  • 125ml non dairy milk of choice; I used unsweetened Vanilla Rice Milk
  • 20g Pulsin Rice Protein
  • 7g (1 tbsp) chia seeds
  • 1 tsp maca powder
  • 2 - 3 tbsp non dairy yogurt of choice; I used Nushfoods Vanilla Cashew yogurt

Instructions

Blend blueberries, banana chunks and non dairy milk to a smooth consistency in a high speed blender. Add a touch more milk if necessary to get things moving; up to 60ml. You want to create a thick soft serve consistency!

Once smooth add in rice protein, chia seeds, maca powder and non dairy yogurt. Blend until it’s smooth and fluffs up!

Serve topped with granola, more frozen or fresh blueberries and some edible flowers for prettiness sake if you can get your hands on some!
